1. 1 chicken
2. 100g soy sauce
3. 0,5 lemon
Marinate for 30 minutes, then put the chicken on “a hook” and roast in a tandoor for 25-35 min.
Tandoori chicken skewers (shashlyk) – recipe of the day
1. 1000g chicken fillet
2. 200 ml kefir
3. 1-2 onions
Fillet cut into pieces, salt, pepper, pour kefir, marinate 1 hour, strung meat on skewers, cook in a tandoor for 15 minutes.
Lamb (in cognac) in a tandoor – the most original
1. Lamb (loin on a bone) – 1kg
2. Onions – 3-5 pcs
3. Lemon – 1
4. Cognac – 5 tbsp
5. Greens (dill, cilantro, parsley)
6. Salt, pepper, to taste
Rub lamb with salt and pepper, squeeze juice from one lemon and mix with cognac, chop greens. Marinate the lamb for 1 hour. Roast the leg of lamb in tandoor for 45-55 min.
Tandoori pork skewers (shashlyk) with potatoes

1. Pork meat – 500g.
2. Small potatoes – 500g.
3. Onions - 2-3 pcs.
4. Salt and pepper to taste
Cut the meat into small pieces, peel the potatoes slice onions. Stung on skewers alternately potatoes, meat, onion rings, add salt and pepper. Cook shashlyk in tandoor for 30 minutes.
3. Beer (mayonnaise)

3. Lemon 1
Devide fish into portions, season with salt to taste, put a slice of lemon on each piece of fish, put a sprig of rosemary. Roast the fish in the tandoor for 10 minutes.
Tandoori duck (Peking duck)
3. Soy sause 5 tbsp.
4. Honey 2 tbsp.
Cook the duck in boiling water for 20 minutes. Then take it out and cool. Rub with salt and pepper. Lard with garlic. Mix soy sauce and honey, pour the duck with it and then place in preheated tandoor for about 1-1,5 hour.
Tandoori beef skewers (shashlyk)
1. Beef 2kg.
2. Onion 0,5kg.
4. Fruit vinegar 3-5 tbsp.
5. Oil 5 tbsp.
6. Fat 0,5kg.
Beef fillet cut into pieces of 30g, add chopped onion, salt, black pepper, fruit vinegar, bay leaf, allspice pepper, oil, stir and marinate in enamelware for 4-5 hours. Then strung meat on a skewers alternating with onion rings and slices of bacon, roast in the tandoor.
Shashlyk in white wine
1. Pork 2kg.
2. Onion 1kg.
4. White dry wine 2 cups
Cut pork into medium-sized pieces, put in a bowl, add salt, ground black pepper and mix well. Cut onions into rings and add white dry wine, mix and marinate for 4 hours. Put pieces of meat on skewers and cook in a tandoor.
Tandoori chicken in nut sauce
1. Chicken 1kg.
2. Nuts 200g
3. Onion 2 pcs
4. Oil 0,5 cup
5. Garlic 3-5 cloves
Chicken fillet cut into pieces of medium size. Make a sauce from a mixture of chopped onion, ground garlic, roasted and crushed nuts (peanuts, walnuts, hazelnuts) and oil. Rub meat with sauce, put in a pan and marinate within 2-3 hours. Then add salt and pepper, mash a little, strung on skewers and cook in a tandoor.
Sturgeon with sour cream in a tandoor
1. Sturgeon 1kg.
2. Sour cream 200g
Fillet of sturgeon cut into slices, add salt, pepper and strung on skewers, grease a sour cream and cook in a tandoor. Serve shashlyk on a dish with onion rings and parsley.
Pellet «Lochira» for 3-4 servings
1. Wheat flour – 1500g.
2. Flour for sprinkling – 50g.
3. Lamb fat or margarine – 40g.
4. Milk - 170ml.
5. Salt – 10g.
Dissolve salt in milk, add lamb fat or melted margarine, flour and knead the dough, leave it for 30-40 min. Divide the dough into pieces, roll into balls and leave for about 20-25 min. Roll out balls with 3-5mm thickness, apply patterns with a knife. Cook in electric or gas tandoor.
Homemade tortillas with milk
1. Wheat flour - 1kg.
2. Yeast – 30g.
3. Milk - 4 cups
4. Oil - 300ml.
Dissolve yeast in warm water. Add oil and flour. Stir the ingredients and pour milk, add salt, knead the dough and put it in a warm place for fermentation. When dough is ready divide it into pieces weighing 150-200g, shape small balls and roll out tortillas. The thickness of the edges is 2cm, in the mid – 0,5cm. Press down the middle part slightly. Grease its back side with water and bake in a tandoor or a gas oven.
Tandoori lamb recipe - Caucasian cuisine
1. Lamb - 1,5kg.
2. Onion - 5 pcs
3. Lemon - 1 pcs
4. Ground black pepper - 1/2 tsp, ground red pepper - 1/2 tsp
5. Garlic - 3 cloves
Lamb fillet (we recommend a loin) cut into pieces 30-35g, add salt, ground red pepper, mix with grated onion, minced garlic, pour a lemon juice. Then put it in a cool place for 6-8 hours. Strung meat on skewers and cook in a tandoor.
Tandoori leg of lamb
Marinate a leg of lamb in spices for 1-2 days in a cool place. Before cooking, stuff a leg with carrots and garlic. Wrap it in a foil and roast in a tandoor. Cooking time varies from 1,5- to 3 hours depending on a piece of meat. Cook with closed lids, burnt coals lie on the bottom of the tandoor. 15 minutes before it will be ready you can open the ash-pit and a small top lid - in this case a tasty crust will appear. It is served with fresh vegetables and roasted potatoes.

The recipe for restaurants
Cut pork (neck, ribs, fillets, chopped into 4-5cm pieces) into 3cm wide pieces. Separate ribs one from another. For each kilo of meat scroll through a meat grinder 100g of onion, add dried herbs, ground red pepper and paprika to taste (about half a teaspoon), 2-3 tablespoons of oil or mayonnaise. Mix well, marinate meat for 2 hours. Strung on skewers and cook in a tandoor (for about 9-12 minutes).
Cook a duck in the boiling water for 10 minutes. Then take it out and cool. Rub salt and pepper. Place in a preheated tandoor (for 1-1,5 hours). You can stuff a duck with apples, grapes or carrots with onions and nuts.

1. Leg of lamb 3-5kg.

Rub a leg of lamb with salt, pepper and herbs, marinate for 30 minutes, cook in a tandoor for 40 min. Put a leg of lamb on a “hook”.
The recipe from a hunter
Boil a duck for 20 min, rub salt, pepper and garlic, optional you can stuff it with apples or grapes. Then place the duck on a “hook” and roast for 30-40 min.

Rub quails with mixture of salt and pepper, rosemary (optional) also grease mayonnaise or olive oil, let it marinate for 30 min. Roast in a tandoor using a device “Tree”

Potatoes with bacon
Wash potatoes, cut in half, season with salt and pepper, put a piece of bacon (or smoked bacon), fold the two halves and wrap in a foil. Put potatoes on the mesh of a tandoor or strung on skewers. Cook 15 min.
Tandoori salmon in a foil
1. Salmon 1kg.
2. Salt 0,5 tsp.
3. Spices for fish 1 tsp
4. Lemon 1 pcs
Cut fish into serving pieces, season with salt and rub the spices put a slice of lemon on each piece. Wrap in a foil. Roast in a tadoor on a grill.
Tandoori river fish
Recipe from a fisherman
Big fish cut into steaks, season with salt, wrap in a foil and put on the grill. Put a grill in a preheated tandoor. Cook 15 min. Fish cooked in a tandoor is delicious and healthy!
Tandoori roast in a pot
For summer houses
1. Meat (any kind) - 0,5kg.
2. Mashrooms (marinated) - 1 jar
3. Potatoes - 1kg.
4. Onion - 1 pcs
5. Carrots - 2 pcs
6. Sweet pepper (paprika) - 1 pcs
7. Salt 1 tsp.
9. Mayonaisse 2 tbsp
10. Cheese (optional)
First, fry meat, and then put all ingredients in layers: meat, potatoes, carrots, onions, season with salt and pepper. Put a pot in a preheated tandoor on the grill for 30 minutes.
Meat in dough baked in a tandoor
1. Pork (chuck или биточное) 1kg.
2. Salt 1 tsp

Knead the dough as for dumplings. Season meat with salt and pepper, rub with spices and lard with garlic. Roll out the dough on the table and wrap meat in it. Line the foil on the grill and put meat. Bake for 1,5-2 hours.
